House-Autry Fried Green Tomato Pie

  • 1/2 cup House-Autry Chicken Breader
  • 1 frozen pie crust, fully baked as directed
  • 1/4 cup shredded five-cheese Italian blend
  • 1-3/4 cups Clover Valley® Shredded Mozzarella, divided
  • 1/2 cup medium-size ripe red tomatoes
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 3 cup Clover Valley® Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/8 tsp. pepper
  • 2-3 green tomatoes
  • 3/4 cup Clover Valley® Bottled Italian Dressing
Slice the red tomatoes and lay on a paper towel to absorb the liquid. While the crust is still hot, sprinkle with the five-cheese blend and 1/4 cup mozzarella; set aside to cool.
Place one layer of red tomato slices on top of cheese. Sprinkle with minced garlic and basil. Stir together mayonnaise, 1 cup mozzarella, Parmesan cheese and pepper. Spread over the tomatoes and refrigerate until ready to bake.
When ready to bake, dip green tomato slices in the dressing and coat in House-Autry Chicken Breader. Fry in hot oil until crisp; drain on paper towels. Layer tomatoes on top of pie and sprinkle with remaining 1/2 cup mozzarella cheese. Bake at 375°F for 35-45 minutes until cheese is bubbling.
