Sunny’s Mango and Honey Easy Roasted Sweet Potatoes

For the glaze
  • 1/4 cup honey
  • 1/2 cup Lipton Tea, Mango
  • 2 Tbsp. apple cider vinegar
For the potatoes
  • 4 large (about 2 lb.) sweet potatoes, peeled and cut into chunks
  • 1 sweet onion, diced
  • 2 Tbsp. canola oil
  • Salt and pepper
  • 1/2 cup chopped pecans
Directions
Preheat. Preheat to oven to 425°F.
Make the glaze. In a small pot on medium heat, whisk together the honey, tea and vinegar. Cook until slightly reduced.
Toss. In a big bowl, toss the sweet potatoes and onions with oil. Pour the glaze over the potatoes and toss to coat. Season with plenty of salt and pepper. Place onto a parchment-lined sheet tray.
Bake. Bake for 35 minutes, stirring halfway through the cooking process. Remove from the oven and place into a serving bowl, sprinkle the pecans over top. Serve warm, room temperature or chilled.
