Sunny’s Easy Apple & Greens Chopped Salad

For the dressing
  • 3 Tbsp. Greek yogurt
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. olive oil
  • 2 tsp. sugar
  • Salt and pepper
For the salad
  • 1 red onion, sliced very thinly
  • 5 oz. of your favorite lettuce, roughly chopped (arugula, romaine, Bibb, baby spinach, the options are endless!)
  • 2 apples, a mixture of red and green, chopped
  • 1/2 cup raisins, golden or red
  • 1 cup shaved Parmesan cheese
Make the dressing. In the bottom of a big salad bowl, whisk together yogurt, vinegar, sugar, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Assemble salad. Rinse the sliced red onion under cold water to take the edge off. Into the salad bowl, toss the lettuce, red onions, apples, raisins and shaved Parmesan. Toss to coat and serve immediately.
